Tie meat
Mix salt, pepper, mustard, paprika and garlic
Cover meat
Leave for at least 30 minutes
Heat up oil in casserole dish until really hot
Fry each side until brown like steak (~5-7 min per quarter)
Add onion and fry a bit (~5 min)
Add water a bit at a time until half the meat is covered
Covered
Cook for 2-3 hours on low heat
If necessary remove froth from surface at the beginning of cooking
Cool
Remove excess fat from liquid
Slice
Return to oven to warm
Serve on a small platter with juices
